Syrup sponge pudding

Ingredients

110g margarine

110g caster sugar

110g self raising flour

2 medium eggs

3-4tbs golden syrup

Equipment

Mixing bowl                                                                Electric whisk

Metal spoon                                                              Measuring scales

Pudding basin                                                          Steamer saucepan

Measuring spoons

Method

Cream the margarine and butter

Add an egg and 1tbs of flour and mix

Add the second egg and 1tbs flour and mix

Fold in the rest of the flour with a metal spoon

Ensure the mixture is well combined

Grease the pudding basin

Pour the golden syrup in to the pudding basin and add the mixture on top

Place lid on the basin (or tie greaseproof paper around the top)

Steam for 1½ hours
