Chocolate chip mousse

Ingredients
150g dark chocolate
250ml crème fresh
300ml double cream
30g icing sugar
Chocolate chips/chunks
Equipment
Medium Saucepan Glass dish (to melt chocolate in)
Electric mixer Whisk
Colour works spatula Metal spoon
Method
- Melt the chocolate in a dish over a saucepan of water on a low heat
- While the chocolate is melting use the electric whisk to whisk the double cream and icing sugar
- Take the melted chocolate off the heat and whisk the crème fresh in, then fold this mixture in to the cream mixture
- Fold in the chocolate chunks/chips
- Spoon in to ramekins and grate chocolate over the top
- Place into the fridge to set until serving
